[Why Take 2? For those of you that subscribe and/or read my (other) blog, my previous attempt was prematurely published when I attempted to use the ‘not-so’ handy mobile app from my phone. Tack this under — ‘never-again’!]
Anywhooooo….I rarely see an organic pineapple that I pass up, and although I had initially thought it would make a great raw snack, or perfect addition to a peach-mango Isalean shake, I decided to add it to my chicken instead!
It was a winning decision!
{And because I don’t believe in boring a person to death with jibberish when all you wanted is a recipe…..here you go!}
Ingredients:
- boneless chicken breast — sliced or diced — or (cooked leftovers, chopped)
- pineapple chunks
- onion, sliced
- carrots, sliced or diced (your preference–anything goes)
- peppers — red, green, orange, yellow — your preference; optional
- garlic, minced
- cajun seasoning — or combination of paprika, garlic, onion powder or granules, oregano, thyme, cayenne pepper, black pepper, sea salt; see recipe below!
- ginger — raw or paste, or powdered if that’s all you have but fresh ginger is amazing and tastes way different in my opinion! It adds a lemony zing that doesn’t come through in the powdered form.
- TURMERIC TEA ( Ingredients: organic turmeric root, organic true cinnamon, organic black peppercorn, organic ginger root, organic fennel seed, organic cassia cinnamon, organic cloves, organic stevia ) or chinese 5 spice — or pumpkin/apple pie spice — or combo of cinnamon, ginger, turmeric, cumin….anything that reminds you of a warm pumpkin or apple pie! Be creative; use whatever you have in small quantities! You can always adjust to add more before serving.
- coconut oil, avocado, or olive oil for sauteeing (these are my go-to’s)
- honey or sugar
- apple cider vinegar — or whatever you have on hand
- cornstarch — for thickening sauce
- orange juice, or water — [juice of a whole orange + grated zest]
- jasmine rice, cooked– or rice/side of your preference
Directions:
- Heat oil in skillet pan, or wok — and add chicken, veggies, and cajun seasoning.
- When chicken is no longer pink, and veggies are softened to your preference, add the pineapple and stir to heat through.
- Add turmeric tea or cinnamon-ginger etc; stir.
- Add vinegar and sugar/honey until sweetened to desired taste.
- Add combo of water and cornstarch, stir into pan until thickened.
- Adjust seasonings to preference and enjoy over hot rice!
