Chicken, Asparagus, & Cilantro with Penne & Parmesan

Today I received my Farm Bound box and became inspired for this dish while unpacking my ingredients.

From cutting board to table in 30 minutes or less!


1 Chicken breast, sliced
6 Cremini mushrooms, sliced
1 Red onion, sliced
3 sprigs Asparagus
4 tbsp Cilantro, chopped
2-4 Garlic cloves, chopped
1 tbsp Cajun seasoning
1/2 tsp Curry powder
1 tbsp Olive oil
1/4 C Chicken broth
1/4 C Cream/milk of choice
1-2 C Penne pasta, uncooked
Parmesan cheese, grated
Sea Salt & Pepper


Sauté sliced chicken & veggies in olive oil, along with seasonings — except cilantro.
(Tip: Pre-cook whole chicken breast until firm. Remove from pan & slice. Finish cooking with veggies.)

Prepare pasta while veggies are cooking.

Add broth & cream, parmesan cheese, salt & pepper.

Top with cilantro & serve!
